Day 11: Fastnachts

Recipe 1 of Fastnachts/Potato Yeast Doughnuts

Combine and then add 2 pk dry yeast dissolved in ½ c lukewarm H2O.

1 c lukewarm potato H2O

2 T sugar

2 c flour

Let stand 1 hour.

Combine and add to yeast mixture:

1 c mashed potato

½ c soft shortening

2 eggs

10T sugar

1 ½ t salt

 Add 4-5 c flour.

Let stand until doubled, 1 ½ - 2 hrs. Punch down and let rise again. Roll, cut, let rise, and fry.

Makes 4 doz.

Recipe 2 of Lizzie Bauer’s Dough Balls

1 c sugar

2 eggs

1 c milk (scant)

2 T butter

2 t B Powder

1 t vanilla

Flour to stiffen (like soft cookie dough)  (about 3 ½ cups, according to test cook Susan Davis)

Drop into hot fat by teaspoonsful about 375. Fry about 5 min total.

Recipe 3 of Annie’s Raised Doughnuts

1 pt mashed potatoes

1 pt sugar

1 pt water

3 eggs

½ pt lard

1 c yeast

1 t salt

To make yeast:

Take a good size potato and grate it, then mix it in a little lukewarm water.  Cook it till thick and then remove it from the heat and let it get lukewarm. Add ¾ cake of yeast mixed in a little water.  Also a good tablespoon of sugar - stir and let rise in big bowl.

Day 12: Shoofly Pie

Recipe 1 of  ShooFly      

350 for 40 minutes    1 - 10” or 2 smaller

1 c flour

⅔ c yellow sugar

1 T Crisco (heaping maybe)

1 c molasses

1 egg (slightly beaten)

½ c boiling H2O

1 t baking soda dissolved

1/4c H2O(better to use only 2 T)

Sprinkle a few crumbs into pie shell - reserve a few more for on top.  Stir molasses mix into crumbs, pour into pastry, top with crumbs.

Recipe 2 of Shoo Fly                  

Makes 1 - 9” 

Crumbs:

2 c flour

½ c sugar

¾ t baking powder

⅓ c lard

¼ t salt

Gooey:

1 c molasses

1 c H2O(boiling)

½ t soda

375 for 45 minutes

Recipe 3 of Mrs Smith's Shoe Fly

3 cups flour

½ cups lard and butter

½ cups soft white sugar

1 cup molasses not too full

1 cup warm water pretty warm

½ cup sugar

½ teaspoonful cream tarter

1 teaspoonful baking soda

Take half of the cream tarter and half of the baking soda and put in with the warm water, molasses, and sugar. The other soda and powder put in flour, lard, and sugar. Then put some of the warm water molasses and sugar in the bottom of the dish on your pie crust then some of the crumbs then molasses then the crumbs so until you have all used up.

Recipe 4 of Shoo Fly Cake 

1 cup molasses

1 cup hot water or sour milk

1 teaspoon soda

Mix these ingredients together.

3 cups of flour

1 cup brown sugar

½ cup butter and lard

Crumb these three together, take out a few crumbs for the top of cake. Mix the crumbs with first three ingredients. Line pie tins with crust and pour in batter and lastly sprinkle crumbs on top.

Recipe 4 of Annie Croller’s Unraised Doughnuts

1 ½ c sugar, half brown

2 eggs

1 c milk

1 c potatoes

Piece of butter

3 t BP

2 c flour

Pinch of salt

Recipe 5 of Good Doughnuts

2 c sugar, 2 c sweet milk, 2 eggs, 1 t saleratus, 2 t cream tartar, 1 t ginger, little nutmeg

Recipe 6 of Doughnuts

2 qts flour, 4 heaping t B. Powder, 1 t salt, 2 c sugar, 2 eggs, 1 T melted butter. Mix with cold milk to a consistency sufficient to work it well. These things are excellent and worth making. Beat the whites of the eggs to a froth.

Recipe 7 of Laura Shanely’s Doughnuts

1 ½ c soft white sugar, 2 eggs, 1 c mashed potatoes, 1 c sweet milk, 4 c flour, 4 t BP

Recipe 8 of Dough Nuts     

7 lb of flour, ¾ lb of butter, 1 ¼ lb of sugar, quart of milk, 1 tea cup of yeast

Recipe 9 of Doughnuts

3 lb flour, ½ lb butter, ½ lb sugar, 6 eggs well beaten, yeast, spice and as much milk as will make a light dough.

Recipe 10 of Doughnuts  (from Mrs. Hitching)

1 qt of milk warm enough to melt a coffee cup of butter. Add flour enough to set a sponge, small tea cup of yeast. When light, add 4 eggs, 2 large coffee cups of sugar, 1 nutmeg, 1 pint more of milk, little salt, small teaspoon of salaratus and flour enough to stir it stiff with a spoon.

Recipe 11 of Fastnacht Küchen (from Raymond E Hollenbach)

¾ c thick sour cream, ¾  c thick sour milk, ¼ c sugar, 1 egg, 1 1/2 t soda

Stiffen with enough flour(2 ½ cups as reported by test cook) to roll. Roll about 1/4” thick and cut into desired shape and size. 2” squares are preferable. Fry in deep fat. The amount of sugar may be larger but is not necessary if eaten in the desired manner. To eat, split the kuche in half and fill the inside with quince jam. To use common ordinary molasses on a genuine fastnacht kuche is an abomination.

Recipe 5 of Shoo Fly Cake (from Miss Emma Fritz Receipt)

1 cup molasses, 1 cup hot water, 1 teaspoon soda in 3 tablespoonful of sugar. 4 cup of flour, 1 ½ cup of sugar, ¾  cup butter and lard. Crumb these three ingredients together. Take out a few crumbs for the top of the cake. Mix the crumbs with first three ingredients. Line pie tins with crust and pour in batter. Lastly sprinkle crumbs on top.

Recipe 6 of Shoo Fly Cake  (from Mrs Dotterer)

¾ cup molasses

½ cup hot water

1 teaspoon soda in 3 teaspoon of vinegar

½ cup butter and lard

3 cups of flour

2 cups sugar

Mix first 3 ingredients together then mix 3 last ingredients together. Take out a few crumbs for the top of cake. Line pie tins with crust and pour in batter and lastly sprinkle crumbs on top. Mix the crumbs with first 3 ingredients together only keep out a few crumbs for on top.

Recipe 7 of Show Fly

A little more [? - word missing in original], ½ cup molasses, ½ cup water, ½ teaspoon soda, 3 cups flour for crumbs.

Recipe 8 of McKinley Shoe Fly Cake

Lower part: 1 egg, ½ c molasses, ½ c sugar, 1 T flour, ½ t soda

Upper part: 1 egg, 2 c sugar, ½ c lard, 1 c sweet milk, 3 c flour, 2 t baking powder

Recipe 9 of Shoo fly Cake 

3 medium size cake

3 c flour

1 c brown sugar

Scant ½ c lard

Level teaspoon baking powder

1 c molasses

1 c warm water

1 teaspoon soda

Recipe 10 of Shoo fly Cake

1 cup molasses                                Crumbs:

1 cup boiling water                           4 cups flour

1 teaspoon soda                               1 cup sugar

1 teaspoon vinegar                          shortening

Recipe 11 of Very Old Recipe from Shanesville, PA 

2 cups of flour

1 cup brown sugar

1 cup molasses

1 cup of milk

1 teaspoonful baking soda

In 3 medium crusts

Recipe 12 of Alma Wood’s Mothers’ recipe for Shoofly Pie     

Makes 2 - 9” pie

Crumbs - Mix as for Pie Crust

3 c sifted all-purpose flour

¼ t salt

1 c dark brown sugar, packed

½ c lard

Liquid:

1 c boiling H2O

Add 1 t baking soda and 1 cup molasses (barrel)

Stir well.

Pour liquid in pastry lined pans. Add crumbs. Bake 350 for 35 mins.
